Ingredients
- 600g quality meat (beef, chicken or lamb)
- 3 tbsp olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 medium tomatoes, chopped
- 1 cup red wine or broth
- Fresh rosemary and thyme
- Salt, black pepper and paprika
- 2 bay leaves
Instructions
- Season the meat generously with salt, pepper and paprika. Heat oil in a heavy-bottomed pot.

- In the same pot, sauté the onion and garlic over medium heat until softened, about 5 minutes.
- Add tomatoes, wine or broth, bay leaves and herbs. Stir to combine and return the meat to the pot.
- Bring to a boil, then reduce heat to low. Cover and cook for 45–60 minutes until tender.
- Check seasoning and adjust. Rest for 5 minutes before serving with potatoes, rice or bread.
